Chicken& Cabbage Salad – surprisingly tasty

Robb Wolf’s book, The Paleo Solution, includes a 30 day meal plan to get you started in eating Paleo.  In it, there is a recipe for Tuna and Cabbage Salad.  I’m not a fan of tuna, unless in actual tuna salad (with homemade mayo, eggs, celery, etc).  So here is my take on it…

Chicken and Cabbage Salad

Ingredients…

  • 1 head cabbage – cut int quarters/eighths
  • 1 long carrot
  • 2 radishes
  • 2 tbsp sliced black olives
  • Olive oil
  • Balsamic Vinegar
  • Oregano
  • Salt Pepper
  • Cooked Chicken (4-5 oz per serving)

Steps…

  • In food processor, shred cabbage, carrots, radishes
  • Transfer veggies to large mixing bowl (I used a big tupperware with lid – this serves about 4)
  • Add olive oil (I can’t tell you how much… maybe a couple tbsps…)
  • Add Balsalmic Vinegar to taste
  • Mix with spoon
  • Add Olives
  • Add salt, pepper and oregano to taste
  • Serve in large salad bowl and add chicken on top

DONE.

Not hard and pretty good for a quick dinner!
