This past weekend, my whole family was in town. And Mom and I stayed Paleo (and by default so did my father and brother! :))
Saturday dinner –
Ben (brother) cooked some spinach, cheese, mushroom stuffed Pork, wrapped in bacon. We had some collard greens and salad with balsamic vinaigerette.
Sunday, we did our own thing…
Mom had a Protein shake with…
- Whole Foods 365 vanilla flavored Whey Protein Powder (1 scoop)
- Raspberry/Balckberry/Blueberry sauce (1/3 of each cooke in 1/4 c. water and 1 tsp agave nectar)
- 1 tsp almond extract
I had 2 slices of Pederson Bacon and 2 eggs (Omega fortified)
We had a great early dinner, the preamble were some great appetizers including:
- Pederson Wenzel Polish Sausage and Green Chile Sausage
- Asparagus speartops wrapped in Bacon – recipe from Everyday Paleo
- Fresh veggies with 2 different dips:
Neuschafel cheese with Austin Slow Burn Salsa con Habenero
Neuschefel cheese with Fredericksburg Farms Garlic and Cilantro - Guacamole Deviled Eggs– from Paleo Plan
Dinner included:
- Whole, free range chicken
- Cauliflower (steamed with salt and pepper), also optional cheese sauce made from butter, cream, quinoa flour and cheddar cheese)
- Fresh green beans
- Fried Cabbage
Dessert – was AMAZING! For Early Valentine’s Day we made the Flourless Decadent Chocolate Cake from Paleo Betty. It was SO rich and aptly described as Decadent! We offered 3 “sauces” – the banana cinnamon sauce from the recipe; blueberry/blackberry/raspberry sauce; or homemade whipped cream
