Here’s another tasty one…
This one I came up with myself from some experience with Epicurious app for iPad.
Defrosted 2 tilapia filets (about 8 oz total)
While that was defrosting, I put some corn in the microwave (one of those single serve microwavable packets). Then cut up and combined about a cup of mango (I had from frozen), an avocado into chunks, about 1/4 cup of white onions, a tsp of finely chopped jalapeno, and some cilantro. Seasoned the salsa with cumin and lemon.
Heated non-stick skillet (add coconut oil)
Seasoned the tilapia with cayenne and chili powder
Cooked fish about 4 minutes on each side. I like macadamia nuts, so topped the fish with crushed nuts.
I wouldn’t use the Chard as the side again, but love it anyway.
